Sweet Baby Ray’s Crockpot Chicken

Ingredients:
4 boneless, skinless chicken breasts
1 ½ cups Sweet Baby Ray’s barbecue sauce (or your preferred BBQ sauce)
¼ cup brown sugar
1 tablespoon Worcestershire sauce
1 tablespoon apple cider vinegar
1 teaspoon garlic powder
1 teaspoon smoked paprika (optional, for added smokiness)
Salt and pepper to taste
½ cup chicken broth (for added moisture)
1 tablespoon cornstarch (optional, to thicken sauce)
Fresh parsley (optional, for garnish)

Directions:
Prepare the Crockpot:
Spray the inside of your crockpot with non-stick cooking spray or lightly grease with oil to prevent sticking.
Season the Chicken:
Season the chicken breasts with salt, pepper, garlic powder, and smoked paprika (if using) on both sides. Place them at the bottom of the crockpot.
Mix the Sauce:
In a medium mixing bowl, whisk together the Sweet Baby Ray’s barbecue sauce, brown sugar, Worcestershire sauce, apple cider vinegar, and chicken broth until well combined.
Cook the Chicken:
Pour the BBQ sauce mixture over the chicken breasts, ensuring they are fully coated. Cover the crockpot with the lid and cook on Low for 6-7 hours or on High for 3-4 hours, until the chicken is tender and fully cooked (internal temperature should reach 165°F).
Shred the Chicken:
Once the chicken is cooked, use two forks to shred the chicken directly in the crockpot. Stir the shredded chicken into the sauce to ensure it’s fully coated.
Optional: Thicken the Sauce:
If you want a thicker sauce, in a small bowl, mix 1 tablespoon of cornstarch with 1 tablespoon of water to make a slurry. Stir the slurry into the crockpot and cook on High for an additional 15-20 minutes until the sauce thickens.
Serve:
Serve the BBQ chicken over buns for sandwiches, with rice, or as a filling for tacos. Garnish with fresh parsley if desired.
