Southern Smothered Pork Chop Gravy Bake

Ingredients

4 thick-cut pork chops, about 1 inch thick
2 tablespoons all-purpose flour
1 teaspoon paprika
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon cayenne pepper (optional, for a little heat)
Salt and freshly ground black pepper to taste
2 tablespoons vegetable oil
1 large onion, chopped
2 cloves garlic, minced
4 cups chicken broth
1/2 cup milk
2 tablespoons butter
1 package (8 ounces) wide egg noodles
1/4 cup chopped fresh parsley, for garnish

Instructions

  1. Season the pork chops generously with flour, paprika, garlic powder, onion powder, cayenne pepper (if using), salt, and pepper. Ensure each chop is coated evenly. (5 minutes)
  2. Heat the vegetable oil in a large, deep skillet or Dutch oven over medium-high heat. Sear the pork chops for 3-4 minutes per side, until browned. Remove the chops from the skillet and set aside. (8-10 minutes)
  3. Add the chopped onion to the skillet and cook until softened and translucent, about 5 minutes. Add the minced garlic and cook for another minute until fragrant. (6 minutes)
  4. Gradually whisk in the chicken broth, scraping up any browned bits from the bottom of the skillet. Bring to a simmer and cook for 10 minutes, allowing the sauce to reduce slightly. (10 minutes)
  5. Stir in the milk and butter. Continue to simmer for another 5 minutes, until the gravy thickens to your desired consistency. Season with additional salt and pepper to taste. (5 minutes)
  6. Return the seared pork chops to the skillet, nestling them into the gravy. Cover and simmer for 20-25 minutes, or until the pork chops are cooked through and tender. (20-25 minutes)
  7. While the pork chops are simmering, cook the egg noodles according to package directions. Drain well. (8-10 minutes)
  8. Gently stir the cooked egg noodles into the gravy, ensuring they are well coated.
  9. Transfer the mixture to a greased 9×13 inch baking dish.
  10. Bake in a preheated oven at 350°F (175°C) for 15-20 minutes, or until bubbly and heated through. (15-20 minutes)
  11. Garnish with chopped fresh parsley before serving.

Pro tip
For a richer flavor, use bone-in pork chops and don’t discard the pan drippings after searing, instead incorporating them into the gravy.
