Ingredients
2 lbs ground beef
1 cup breadcrumbs
1/2 cup grated Parmesan cheese
1/2 cup milk
2 large eggs
1 small onion, finely chopped
3 cloves garlic, minced
1 tsp dried oregano
1 tsp dried basil
1 tsp salt
1/2 tsp black pepper
1/4 cup ketchup
1/4 cup grated mozzarella cheese (optional)
Directions
- In a large bowl, combine the ground beef, breadcrumbs, Parmesan cheese, milk, eggs, onion, garlic, oregano, basil, salt, and pepper. Mix until well combined.
- Shape the mixture into a loaf shape and place it in the slow cooker.
- Spread the ketchup evenly on top of the meatloaf.
- Cover and cook on low for 6-7 hours, or until the meatloaf reaches an internal temperature of 160°F (70°C).
- If using, sprinkle the mozzarella cheese on top in the last 15 minutes of cooking.
- Once done, let the meatloaf rest for a few minutes before slicing and serving.
