Slow Cooker Chicken Cacciatore

Ingredients6 chicken thighs, bone-in and skin-onSalt and pepper, to taste1 tablespoon olive oil1 large onion, sliced1 bell pepper, any color, sliced2 cloves garlic, minced1 can (28 oz) crushed tomatoes1/2 cup chicken broth1 teaspoon dried oregano1 teaspoon dried basil1/2 teaspoon dried thyme1/4 teaspoon red pepper flakes, optional1 cup sliced mushrooms1/4 cup chopped fresh parsley for garnishDirectionsSeason the chicken thighs with salt and pepper.In a large skillet, heat the olive oil over medium-high heat.
