Slow Cooker 4-Ingredient Hobo Dinners

Ingredients

1 pound ground beef

4 medium potatoes, sliced

2 cups carrots (baby or sliced)

1 packet onion soup mix

Instructions

  1. In a skillet, brown the ground beef over medium heat. Drain excess grease.
  2. Layer the sliced potatoes in the bottom of the slow cooker.
  3. Add the carrots on top of the potatoes.
  4. Spread the cooked ground beef evenly over the vegetables.
  5. Sprinkle the onion soup mix over everything.
  6. Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until the vegetables are tender.
  7. Stir gently before serving to combine flavors.

Recipe Notes

  • You can substitute ground turkey or sausage for the beef.
  • Add a splash of beef broth if you prefer a slightly saucier dish.
  • For extra flavor, include garlic powder or black pepper.
  • Top with shredded cheese during the last 15 minutes for a cheesy twist.
  • Store leftovers in the refrigerator for up to 3 days.
