Line a baking sheet with parchment paper or lightly grease it.Pound the chicken to even thickness using a meat mallet (about 1/2-inch thick).Prepare three bowls:Bowl 1: FlourBowl 2: Eggs + milk (whisked together)Bowl 3: Breadcrumbs, Parmesan, garlic powder, paprika, salt, and pepper (mixed)Coat each chicken fillet:Dredge in flour (shake off excess)Dip in egg washPress into breadcrumb mixture to coat wellPlace chicken on the prepared baking sheet. Lightly spray the tops with cooking spray or drizzle with a little olive oil for crispiness.Bake for 20–25 minutes or until golden brown and cooked through (internal temp 165°F/74°C). Flip halfway for even browning.Let rest 5 minutes before serving.Note: For extra crispiness, use panko breadcrumbs instead of regular ones, and be sure not to overcrowd the baking sheet—this helps the heat circulate evenly and keeps the coating crunchy. You can also place a wire rack on the baking sheet to let air circulate under the chicken as it bakes.
