Mexican Tortilla Lasagna (5 Ingredients)


Ingredients
10–12 corn or flour tortillas
1 lb ground beef (or chicken)
1 can (10 oz) enchilada sauce
2 cups shredded Mexican-blend cheese
1 can (15 oz) black beans, drained (or refried beans)
(Salt optional if your sauce is mild)
Instructions
Cook the meat
Brown ground beef in a skillet. Drain excess fat. Stir in half of the enchilada sauce.
Layer it up (like lasagna)
Spread a little enchilada sauce in the bottom of a greased baking dish
Add a layer of tortillas (tear to fit)
Add beef, beans, and cheese
Repeat layers until everything is used
Finish with tortillas, remaining sauce, and lots of cheese on top
Bake
Cover with foil and bake at 375°F (190°C) for 25 minutes.
Uncover and bake 10 more minutes until bubbly and golden.
Rest & serve
Let it sit 5 minutes before slicing.
