Ingredients:
For the Meatloaf:
- 1 1/2 lbs ground beef
- 1 egg
- 1/2 cup breadcrumbs
- 1/4 cup milk
- 1/4 cup finely chopped onion

For the Mashed Potatoes:
- 4 large potatoes, peeled and cut into chunks
- 1/4 cup butter
- 1/4 cup milk

For the Gravy:
- 1/4 cup beef broth
- 1 tbsp flour
- 1 tbsp butter
- Salt and pepper to taste
Instructions:
- Preheat the oven to 350°F (175°C). In a large mixing bowl, combine the ground beef, egg, breadcrumbs, milk, chopped onion, garlic powder, salt, and pepper. Mix until well combined.
- Shape the meat mixture into a loaf shape and place it in a baking dish. Spread ketchup on top of the meatloaf for a tangy glaze.
- Bake the meatloaf for 45 minutes to 1 hour, or until the internal temperature reaches 160°F (71°C). Once done, remove from the oven and let it rest for a few minutes before slicing.
- For the mashed potatoes, bring a large pot of salted water to a boil. Add the potatoes and cook for 15-20 minutes, or until tender. Drain the potatoes and return them to the pot. Add butter and milk, then mash until smooth and creamy. Season with salt and pepper to taste.
- For the gravy, melt butter in a small saucepan over medium heat. Stir in the flour and cook for 1-2 minutes until it becomes a paste. Gradually add the beef broth, whisking constantly until the gravy thickens. Season with salt and pepper.
