Ingredients
1 pound ground beef or turkey (optional for added protein)
½ head cabbage, chopped
2 carrots, sliced
2–3 celery stalks, chopped
1 onion, diced
1 bell pepper, diced
2–3 garlic cloves, minced
1 can (14.5 ounces) diced tomatoes
6–8 cups beef or vegetable broth
1–2 teaspoons Italian seasoning
1 bay leaf
Salt and pepper to taste
Optional: a dash of hot sauce or red pepper flakes for added heat
Instructions
In a large pot over medium heat, cook the ground beef or turkey until browned. Drain excess fat if needed.
Add the onion, bell pepper, celery, and garlic. Sauté for 4–5 minutes until softened.
Stir in the chopped cabbage, carrots, diced tomatoes, broth, Italian seasoning, bay leaf, salt, and pepper.
Bring to a boil, then reduce heat and let simmer for 25–30 minutes, or until the vegetables are tender.
Remove the bay leaf before serving. Add a dash of hot sauce or red pepper flakes if desired.
Serve warm and enjoy a hearty, flavorful bowl of cabbage soup.
