Ingredients
1 1/2 pounds ground round (ground beef)
1 sweet onion, diced
1 can diced tomatoes with green peppers and onions
1 cup ketchup
1/2 cup water
Garlic salt, to taste
Seasoned salt, to taste
1 heaping teaspoon ground cumin
1–2 tablespoons taco seasoning
1–2 tablespoons brown sugar
1 tablespoon taco sauce
4–5 medium potatoes, diced into bite-sized pieces
1 can Ranch style beans
1 package Lipton soup mix
Instructions
In a skillet, cook the ground round until well done, golden brown, and no pink remains. Drain excess fat if needed. Season with garlic salt, seasoned salt, cumin, and taco seasoning. Stir well to coat the beef in spices.
Stir in half of the diced onion and cook until softened and fragrant, about 3–4 minutes. This builds the flavor base.
Add the canned tomatoes (with green pepper and onion), ketchup, water, brown sugar, and taco sauce. Stir until everything is well combined.
Place your diced potatoes and other half of the onion in the slow cooker. Sprinkle 1 package of Lipton onion soup mix, garlic salt, and one stick of butter. Cover and cook on high for 3-4 hours.
when the potatoes are tender, pour the taco meat mixture over the top. Stir to coat the potatoes evenly. Top with cheese and serve.
