Ingredients
1.5–2 lb steak (sirloin or stew beef), cut into bite-size cubes
1.5 lb baby potatoes, quartered
1 small onion, finely diced
1 ½ cups shredded sharp cheddar cheese
¾ cup real bacon bits or cooked crumbled bacon
½ cup sour cream
2 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon paprika
Salt and black pepper to taste
Instructions
Lightly grease the crockpot. Add the potatoes and diced onion, drizzle with olive oil, season with salt, pepper, garlic powder, onion powder, and paprika, then toss gently to coat.
Place the raw steak pieces evenly over the potatoes and season lightly with additional salt and pepper.
Sprinkle bacon bits over the steak layer.
Cover and cook on LOW for 6–7 hours or on HIGH for 3–4 hours, until the potatoes are tender and the steak is fully cooked.
About 20 minutes before the end of cooking, sprinkle shredded cheddar cheese evenly over the top, cover again, and allow the cheese to melt.
Add spoonfuls of sour cream over the top just before serving or gently swirl it in for a creamy finish.
