Ingredients
2 lbs boneless, skinless chicken breasts
1 packet (1 oz) ranch seasoning mix
1 can (10.5 oz) cream of chicken soup
1 cup chicken broth
1 cup sour cream
1½ cups shredded cheddar cheese (divided)
1½ cups uncooked long grain white rice
½ tsp black pepper
1 tsp garlic powder (optional)
Fresh parsley (for garnish)
Instructions
1 Add to Crockpot
Place chicken breasts in the bottom of the slow cooker.
Sprinkle ranch seasoning, pepper, and garlic powder over the chicken.
2 Mix Sauce
In a bowl, combine:
Cream of chicken soup
Chicken broth
Sour cream
Pour mixture over chicken.
3 Cook
Low: 6–7 hours
High: 3–4 hours
Chicken should be fully cooked and tender.
4 Shred Chicken
Remove chicken, shred with two forks, and return to crockpot.
5Add Rice
Stir in uncooked rice.
Cover and cook on High for 30–40 minutes, or until rice is tender.
(Stir once or twice if possible.)
6 Add Cheese
Stir in 1 cup shredded cheddar until melted.
Sprinkle remaining cheese on top, cover for 5 minutes until melted.
Serve
Garnish with parsley and serve warm!
