Crock Pot Swamp Potatoes

Ingredients

  • 3 lbs of baby potatoes, halved
  • 1 cup of shredded cheddar cheese
  • 1 cup of cooked and crumbled bacon
  • 1 packet of ranch seasoning mix
  • 1 cup of heavy cream
  • 1 cup of sliced green onions
  • Salt and pepper to taste

Directions

  1. Place the halved baby potatoes into the crock pot.
  2. In a separate bowl, combine the heavy cream, ranch seasoning, salt, and pepper. Mix well.
  3. Pour the cream mixture over the potatoes in the crock pot.
  4. Add half of the crumbled bacon and half of the green onions to the crock pot, stirring to combine.
  5. Cover and cook on low for 6-7 hours or on high for 3-4 hours, until potatoes are tender.
  6. In the last 30 minutes of cooking, sprinkle the cheddar cheese on top and cover to allow it to melt.
  7. Once cooked, serve topped with the remaining bacon and green onions.
