Ingredients:
1 lb shrimp, peeled and deveined
1 lb sausage, sliced
1/2 cup celery, diced
1/2 cup bell pepper, diced
1/2 cup onion, diced
4 cups chicken broth
1 can diced tomatoes
1/4 cup vegetable oil
1/4 cup all-purpose flour
2 cloves garlic, minced
1 tbsp Cajun seasoning
2 bay leaves
Salt and pepper to taste
Cooked rice, for serving
Chopped green onions, for garnish
Directions:
Heat vegetable oil in a large pot over medium heat. Sprinkle in the flour, stirring constantly to make a roux until it turns deep brown.
Add celery, bell pepper, and onion; sauté until softened.
Stir in minced garlic and cook for 1 minute.
Add sliced sausage and brown for 2 minutes.
Pour in chicken broth, diced tomatoes, Cajun seasoning, bay leaves, salt, and pepper. Stir to combine.
Simmer gently for 30 minutes to let flavors meld.
Add shrimp during the last 5 minutes of cooking until pink and cooked through.
Serve gumbo over warm cooked rice and garnish with chopped green onions.
