Tender steak strips, fluffy rice, and bell peppers smothered in a velvety pepper jack queso – ready in 30 minutes!
Ingredients (Serves 4-6):
- 1 lb flank steak or skirt steak, thinly sliced
- 1 tbsp taco seasoning
- 1 tbsp olive oil
- 1 tsp garlic powder
- 1 cup diced bell peppers (any color)
- 2 cups cooked rice
- 1 cup pepper jack cheese, shredded
- 1/2 cup heavy cream
- 1/4 cup milk
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions:
- Heat olive oil in a large skillet over medium-high heat. Season steak with taco seasoning, garlic powder, salt, and pepper.
- Add steak to the skillet and cook for 4-5 minutes until browned. Remove and set aside.
- In the same skillet, sauté bell peppers for 2-3 minutes until softened.
- Lower heat, add heavy cream and milk, then stir in shredded pepper jack cheese until melted and smooth.
- Return steak to the skillet, add cooked rice, and toss to coat evenly in the queso sauce.
- Cook for 2-3 minutes until heated through. Garnish with fresh parsley.
- Serve hot and enjoy!
