Cheesy Steak & Queso Rice

Tender steak strips, fluffy rice, and bell peppers smothered in a velvety pepper jack queso – ready in 30 minutes!

Ingredients (Serves 4-6):

  • 1 lb flank steak or skirt steak, thinly sliced
  • 1 tbsp taco seasoning
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 cup diced bell peppers (any color)
  • 2 cups cooked rice
  • 1 cup pepper jack cheese, shredded
  • 1/2 cup heavy cream
  • 1/4 cup milk
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions:

  1. Heat olive oil in a large skillet over medium-high heat. Season steak with taco seasoning, garlic powder, salt, and pepper.
  2. Add steak to the skillet and cook for 4-5 minutes until browned. Remove and set aside.
  3. In the same skillet, sauté bell peppers for 2-3 minutes until softened.
  4. Lower heat, add heavy cream and milk, then stir in shredded pepper jack cheese until melted and smooth.
  5. Return steak to the skillet, add cooked rice, and toss to coat evenly in the queso sauce.
  6. Cook for 2-3 minutes until heated through. Garnish with fresh parsley.
  7. Serve hot and enjoy!
