Ingredients
- 2 cups cooked chicken breast, finely chopped or shredded
- 1 cup shredded mozzarella cheese
- ¼ cup grated Parmesan cheese
- 2 large eggs
- ¼ cup mayonnaise
- ⅓ cup all-purpose flour
- 1 small zucchini, grated (squeezed dry)
- 2 tablespoons chopped fresh parsley
- 2 cloves garlic, minced
- Salt and black pepper to taste
- 2–3 tablespoons oil (for frying)
Instructions
- Mix the batter:
In a large bowl, combine chicken, mozzarella, Parmesan, eggs, mayonnaise, flour, zucchini, garlic, parsley, salt, and pepper. Stir until well combined. - Heat the pan:
Heat oil in a large skillet over medium heat. - Form fritters:
Scoop about 2 tablespoons of mixture per fritter into the pan. Flatten slightly with a spatula. - Cook until golden:
Fry for 3–4 minutes per side, until golden brown and cooked through. - Drain & serve:
Transfer to a paper towel–lined plate to drain excess oil.
