Ingredients:** 1 lb ground hamburger meat* 1 can (10 oz) diced tomatoes with chipotle peppers (don’t skip the chipotle, it adds the perfect smoky kick!)* 1 packet (1 oz) low sodium taco seasoning* 4 cups chicken broth* 1 block (8 oz) cream cheese, softened* Optional toppings: shredded cheddar cheese, sour cream, crushed tortilla chips, cilantro, diced avocado, jalapeños**Instructions:** **Brown the Beef:** In a large pot or Dutch oven, brown the ground hamburger meat over medium heat, breaking it up with a spoon. Once fully cooked, drain any excess grease.2. **Flavor Burst:** Add the can of diced tomatoes with chipotle peppers (undrained!) and the entire packet of low sodium taco seasoning to the pot with the ground beef. Stir well and cook for about 2-3 minutes, letting those flavors meld together. It’ll smell incredible!3. **Simmer Time:** Pour in the 4 cups of chicken broth. Bring the mixture to a gentle boil, then reduce the heat to low, cover, and let it simmer for at least 15-20 minutes. Stir continuously until the cream cheese is completely melted and the soup is wonderfully smooth and creamy.
