Meatloaf with Mashed Potatoes and Gravy

Ingredients:

For the Meatloaf:

  • 1 1/2 lbs ground beef
  • 1 egg
  • 1/2 cup breadcrumbs
  • 1/4 cup milk
  • 1/4 cup finely chopped onion
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 cup ketchup (for topping)

For the Mashed Potatoes:

  • 4 large potatoes, peeled and cut into chunks
  • 1/4 cup butter
  • 1/4 cup milk
  • Salt and pepper to taste

For the Gravy:

  • 1/4 cup beef broth
  • 1 tbsp flour
  • 1 tbsp butter
  • Salt and pepper to taste

Instructions:

  1. Preheat the oven to 350°F (175°C). In a large mixing bowl, combine the ground beef, egg, breadcrumbs, milk, chopped onion, garlic powder, salt, and pepper. Mix until well combined.
  2. Shape the meat mixture into a loaf shape and place it in a baking dish. Spread ketchup on top of the meatloaf for a tangy glaze.
  3. Bake the meatloaf for 45 minutes to 1 hour, or until the internal temperature reaches 160°F (71°C). Once done, remove from the oven and let it rest for a few minutes before slicing.
  4. For the mashed potatoes, bring a large pot of salted water to a boil. Add the potatoes and cook for 15-20 minutes, or until tender. Drain the potatoes and return them to the pot. Add butter and milk, then mash until smooth and creamy. Season with salt and pepper to taste.
  5. For the gravy, melt butter in a small saucepan over medium heat. Stir in the flour and cook for 1-2 minutes until it becomes a paste. Gradually add the beef broth, whisking constantly until the gravy thickens. Season with salt and pepper.
  6. Serve the sliced meatloaf on top of the mashed potatoes, then drizzle with gravy. Enjoy this comforting, flavorful meal!
