Meaty Texas Trash Dip

Ingredients (with Quantities)

Base Ingredients

  • 1 lb ground beef
  • 1 packet taco seasoning mix
  • 1/4 cup water
  • 8 oz cream cheese, softened
  • 1 cup sour cream
  • 1 can (16 oz) refried beans
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack or Pepper Jack cheese
  • 1 small can (4 oz) diced green chiles
  • 1/2 cup salsa (optional but recommended)

For Topping (Optional)

  • Chopped green onions
  • Sliced jalapeños
  • Chopped tomatoes
  • Extra shredded cheese
  • Fresh cilantro

Optional Additions

  • Add black beans or corn for texture
  • Stir in cream-style queso for extra richness
  • Swap beef for chorizo or ground turkey
  • Add smoked paprika or chipotle powder for smokiness
  • Use a blend of Mexican cheeses for a deeper flavor

Tips for Success

  • Drain the beef well to prevent excess grease from thinning the dip.
  • Soften cream cheese fully for smoother mixing.
  • Use freshly shredded cheese for the best melt and texture.
  • Stir halfway through baking if you want an evenly creamy interior.
  • Serve hot—this dip thickens as it cools.

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet, cook the ground beef until browned. Drain any grease.
  3. Add the taco seasoning and 1/4 cup water; simmer for 2–3 minutes.
  4. In a large bowl, combine the softened cream cheese, sour cream, refried beans, and salsa. Mix until smooth.
  5. Fold in the green chiles and half of the shredded cheeses.
  6. Stir in the cooked, seasoned beef until fully combined.
  7. Transfer mixture to a baking dish and spread evenly.
  8. Top with the remaining cheese.
  9. Bake for 20–25 minutes, or until hot and bubbly around the edges.
  10. Add optional toppings like green onions, jalapeños, or tomatoes.
  11. Serve warm with tortilla chips, sliced veggies, or crackers.
