Ingredients
1 pound ground beef
4 medium potatoes, sliced
2 cups carrots (baby or sliced)
1 packet onion soup mix
Instructions
- In a skillet, brown the ground beef over medium heat. Drain excess grease.
- Layer the sliced potatoes in the bottom of the slow cooker.
- Add the carrots on top of the potatoes.
- Spread the cooked ground beef evenly over the vegetables.
- Sprinkle the onion soup mix over everything.
- Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until the vegetables are tender.
- Stir gently before serving to combine flavors.

- You can substitute ground turkey or sausage for the beef.
- Add a splash of beef broth if you prefer a slightly saucier dish.
- For extra flavor, include garlic powder or black pepper.
- Top with shredded cheese during the last 15 minutes for a cheesy twist.
