Smoked Bacon Triple-Cheese Cheeseburger Meatloaf Stack


🛒 Ingredients (Serves 6–8)
Meatloaf Base
2 lbs ground beef (80/20 for juiciness)
1 cup breadcrumbs (or crushed crackers)
2 eggs
½ cup milk
½ cup finely diced onion
2 cloves garlic, minced
2 tbsp ketchup
1 tbsp yellow mustard
1 tbsp Worcestershire sauce
1 tsp salt
½ tsp black pepper
½ tsp smoked paprika
Triple-Cheese Layer
1 cup shredded cheddar
1 cup shredded mozzarella
4–6 slices American or Colby Jack
Bacon & Glaze
8–10 slices smoked bacon
⅓ cup ketchup
1 tbsp brown sugar
1 tsp mustard
Optional toppings:
Pickles, crispy onions, fresh parsley
👩‍🍳 Instructions
Preheat Oven to 375°F (190°C). Line a baking sheet or use a loaf pan.
Mix Base: In a large bowl, combine ground beef, breadcrumbs, eggs, milk, onion, garlic, ketchup, mustard, Worcestershire, and seasonings. Mix gently.
Layer & Stack:
Press half the meat mixture into a loaf shape.
Add American slices, then cheddar and mozzarella.
Top with remaining meat mixture and seal edges.
Wrap with Bacon: Lay bacon strips over the top (tuck underneath if possible).
Add Glaze: Mix ketchup, brown sugar, and mustard. Brush over bacon.
Bake 55–65 minutes, until internal temp reaches 160°F (71°C).
Rest 10 minutes before slicing.
🔥 Optional Smoker Method
Smoke at 250°F for about 2½–3 hours until internal temperature reaches 160°F. Brush glaze during the last 30 minutes.
