Ingredients
- 2 lbs beef stew meat, cubed
- 4 medium potatoes, diced
- 3 carrots, sliced
- 1 onion, chopped
- 3 cups beef broth
- 2 tbsp tomato paste
- 2 cloves garlic, minced
- 1 tsp salt
- ½ tsp black pepper
- 1 tsp dried thyme
- 1 tsp Worcestershire sauce
- 2 tbsp cornstarch + 2 tbsp water (optional, for thickening)
Instructions
- Add beef, potatoes, carrots, and onion to slow cooker.
- In a bowl, mix broth, tomato paste, garlic, seasoning, and Worcestershire sauce.
- Pour over beef and vegetables.
- Cook on LOW 7–8 hours or HIGH 4–5 hours.
- If thicker stew is desired, stir in cornstarch slurry during last 30 minutes.
- Serve hot and enjoy!
