Hearty Crockpot Beef Stew

Ingredients

  • 2 lbs beef stew meat, cubed
  • 4 medium potatoes, diced
  • 3 carrots, sliced
  • 1 onion, chopped
  • 3 cups beef broth
  • 2 tbsp tomato paste
  • 2 cloves garlic, minced
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp dried thyme
  • 1 tsp Worcestershire sauce
  • 2 tbsp cornstarch + 2 tbsp water (optional, for thickening)

Instructions

  1. Add beef, potatoes, carrots, and onion to slow cooker.
  2. In a bowl, mix broth, tomato paste, garlic, seasoning, and Worcestershire sauce.
  3. Pour over beef and vegetables.
  4. Cook on LOW 7–8 hours or HIGH 4–5 hours.
  5. If thicker stew is desired, stir in cornstarch slurry during last 30 minutes.
  6. Serve hot and enjoy!
