Slow Cooker Cinnamon Raisin Rice Pudding

Ingredients

  • 1 cup uncooked white rice (short or medium grain)
  • 4 cups milk (whole or 2%)
  • ½ cup raisins
  • ⅓ cup sugar (or to taste)
  • 1 tsp cinnamon
  • 1 tsp vanilla extract
  • Pinch of salt
  • Optional: 1 Tbsp butter

Instructions

  1. Lightly grease the slow cooker.
  2. Add all ingredients and stir well.
  3. Cover and cook Low 3–4 hours, stirring once halfway if you can.
  4. When rice is tender and pudding is creamy, turn off heat.
  5. Let sit 10 minutes to thicken, then stir and serve.

Tips

  • Too thick? Stir in a splash of warm milk.
  • Extra cozy: add a pinch of nutmeg or cardamom.
  • Serve warm or chilled—both are great.
