Season the beef steaks with salt, pepper, garlic powder, and onion powder. If you have time, give them a quick sear in a hot skillet to lock in flavor (optional but worth it).
Place the steaks into the crockpot and add sliced onions if you like. Pour in beef broth along with your gravy base — cream of mushroom, onion soup mix, or brown gravy all work great.
Cover and cook on LOW for 6–8 hours or HIGH for 3–4 hours, until the beef is fork-tender. Spoon that rich gravy over the top and serve with mashed potatoes, rice, or egg noodles for the ultimate comfort meal.

2–3 lbs beef steaks (chuck steak, round steak, or blade steak work best)
1 onion, sliced
3 cloves garlic, minced
1½ cups beef broth
2 tbsp Worcestershire sauce
1 tbsp soy sauce (optional but adds depth)

1 tsp dried thyme
1 tsp paprika
½ tsp black pepper
½ tsp salt (adjust later)
2 tbsp olive oil
Optional:
8 oz mushrooms, sliced
1 tbsp cornstarch + 2 tbsp water (to thicken gravy)
Instructions

Heat olive oil in a skillet over medium-high heat.
Sear steaks 1–2 minutes per side until browned.
2️⃣ Layer the Crockpot
Add sliced onions (and mushrooms if using) to the bottom.
Place steaks on top.
3️⃣ Make the Sauce
In a bowl, whisk together:
Beef broth
Worcestershire
Soy sauce
Tomato paste
Garlic
Thyme
Paprika
Pepper
Pour over steaks.
