8 slices bread (Texas toast, sourdough, or white)
2 cups shredded provolone or Swiss cheese
2–3 tbsp butter, softened (for spreading)
Optional Add-Ins:

Caramelized onions

👩‍🍳 Instructions

Step 1 – Slow Cook the Beef

Place the beef roast into your crockpot.
Sprinkle au jus mix and onion soup mix over the roast.
Pour in beef broth.
Cover and cook:
Low: 8 hours
High: 4–5 hours
Once tender, shred the beef with two forks directly in the crockpot. Keep warm in the juices.

Step 2 – Prepare the Sandwiches

Butter one side of each slice of bread.
On the unbuttered side, layer:
Cheese
Shredded beef
More cheese
Top with another slice of bread (buttered side facing out).
Step 3 – Grill to Golden Perfection

Heat a skillet or griddle over medium heat.
Cook sandwiches 3–4 minutes per side until golden brown and cheese is melted.
Step 4 – Serve with Au Jus

Spoon some crockpot broth into small bowls for dipping. Serve sandwiches hot and enjoy that savory dip!
