Ingredients
1½ cups fresh or frozen blueberries
1 cup milk (dairy or almond milk)
2 large eggs
¼ cup honey or maple syrup
1 tsp vanilla extract
½ tsp cinnamon
¼ tsp nutmeg (optional)
¼ tsp salt
1 cup rolled oats
½ tsp baking powder
2 tbsp melted butter or coconut oil
Instructions
Preheat oven to 375°F (190°C).
Grease jars
Lightly grease oven-safe glass jars or ramekins.
Add blueberries
Divide blueberries evenly among the jars.
Mix wet ingredients
In a bowl, whisk milk, eggs, honey (or maple syrup), vanilla, melted butter, cinnamon, nutmeg, and salt.
Add dry ingredients
Stir in oats and baking powder.
Assemble
Pour mixture evenly over the blueberries in each jar.
Bake
Place jars on a baking tray and bake for 25–30 minutes, until set and lightly golden on top.
Cool slightly & serve
Let cool 5 minutes before serving.
