ultimae Fried Rice

Ingredients

For the Fried Rice

2 cups cooked rice (preferably day-old, cold)

1 tbsp vegetable oil

½ lb shrimp, peeled & deveined

½ lb chicken breast, diced small

2 large eggs, lightly beaten

1 cup mixed vegetables (peas, carrots, corn)

3 cloves garlic, minced

2 tbsp soy sauce

1 tbsp oyster sauce (optional, but adds depth)

1 tsp sesame oil

Salt & black pepper, to taste

Optional add-ins

2 green onions, chopped

½ tsp white pepper

½ tsp chili flakes or chili oil

👩‍🍳 Instructions

1️⃣ Prep everything first
Make sure rice is cold and separated (no clumps).
Season shrimp and chicken lightly with salt & pepper.

2️⃣ Cook the proteins
Heat oil in a large wok or pan over medium-high heat.
Add chicken and cook until golden and cooked through.
Add shrimp and cook 1–2 minutes until pink.
Remove both from the pan and set aside.

3️⃣ Scramble the eggs
In the same pan, add eggs.
Scramble gently until just set. Push to one side.

4️⃣ Aromatics & veggies
Add garlic and mixed vegetables.
Stir-fry 1–2 minutes until fragrant and heated through.

5️⃣ Add rice
Add rice to the pan. Break up clumps.
Cook 2–3 minutes, letting rice lightly toast.

6️⃣ Sauce it up
Add soy sauce, oyster sauce, and sesame oil.
Mix well so every grain is coated.

7️⃣ Bring it together
Return chicken and shrimp to the pan.
Toss everything together. Adjust salt & pepper.

8️⃣ Final touch
Add green onions or chili oil if using.
Stir-fry another 1 minute and remove from heat.
