Slow Cooker Pork Chops with Apples

Ingredients
4 bone-in or boneless pork chops (about 1-inch thick)
3 medium apples (Granny Smith or Honeycrisp), peeled, cored, and sliced
1 medium onion, thinly sliced
3/4 cup apple juice or apple cider (not vinegar)
2 tablespoons brown sugar
1 tablespoon Dijon mustard
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg (optional)
1 teaspoon dried thyme (or 1 tablespoon fresh)
1/2 teaspoon salt (or to taste)
1/4 teaspoon black pepper
2 tablespoons butter, cut into small pieces
1 tablespoon cornstarch + 2 tablespoons water (optional, for thickening)
Instructions
Prepare the slow cooker: Lightly grease the inside of your slow cooker with cooking spray or butter.
Layer the base: Spread the sliced apples and onions evenly across the bottom of the slow cooker.
Season the pork chops: Sprinkle both sides of the pork chops with salt, pepper, cinnamon, nutmeg (if using), and thyme.
Add pork chops: Place the seasoned pork chops on top of the apples and onions.
Mix the sauce: In a small bowl, whisk together apple juice, brown sugar, and Dijon mustard. Pour evenly over the pork chops.
Add butter: Scatter the butter pieces over the top.
Cook: Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until pork is tender and reaches an internal temperature of 145°F (63°C).
Optional thickening: If you want a thicker sauce, remove pork chops and whisk cornstarch slurry into the liquid. Cover and cook on HIGH for 10–15 minutes until thickened.
Serve: Return pork chops to the slow cooker, spoon sauce over the top, and serve warm.
