For the Garlic Butter Steak Bites:
- 1 lb sirloin steak (or your favorite tender cut), trimmed of excess fat
- * 1 tablespoon olive oil
- * 2 cloves garlic, minced
- * 2 tablespoons butter
- * Salt and freshly ground black pepper, to taste
- * Fresh parsley, chopped (for garnish, optional)

- Boil the potatoes: Place your scrubbed baby potatoes in a pot and cover them with cold water. Add a good pinch of salt. Bring to a boil and cook until the potatoes are fork-tender, about 15-20 minutes.
- 2. Smash ’em! Drain the potatoes really well. Then, carefully place them on a baking sheet lined with parchment paper. Gently press down on each potato with the bottom of a glass or a potato masher until they are flattened, but not completely crushed. We want some lovely nooks and crannies!
- 3. Add the goodness: Drizzle the flattened potatoes with olive oil and sprinkle generously with salt and pepper.
- 4. Bake ’em golden: Pop them into a preheated oven at 400°F (200°C) for about 20-25 minutes, or until they’re nice and golden brown and crispy on the edges.

- Prep the steak: Cut your sirloin steak into bite-sized cubes, about 1 inch. Pat them dry with a paper towel – this helps them sear nicely! Season them well with salt and pepper.
- 2. Sear those bites: Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Once hot, add the steak bites in a single layer (cook in batches if needed to avoid crowding the pan). Sear for about 2-3 minutes per side for medium-rare, or longer to your liking. Remove the steak bites from the skillet and set them aside on a plate.
- 3. Garlic Butter Magic! Lower the heat to medium. Add the 2 tablespoons of butter to the same skillet. Once melted, add the minced garlic and sauté for about 30 seconds until fragrant (don’t let it burn!).
- 4. Bring it all together: Return the seared steak bites to the skillet with the garlic butter. Toss them gently to coat. Cook for another minute or so, just to warm them through and let them soak up that delicious garlic butter flavor.
- 5. Serve and enjoy!
