Slow Cooker Corned Beef and Cabbage

Ingredients:

3-4 lb corned beef brisket

1 lb baby potatoes

1 lb baby carrots

1 small head of cabbage, cut into wedges

1 yellow onion, peeled and quartered

1 cup beef or chicken stock

Instructions:

  1. Prepare the Crockpot: Place the corned beef brisket in the bottom of your crockpot, fat side up.
  2. Add Vegetables: Surround the brisket with baby potatoes, baby carrots, cabbage wedges, and onion quarters.
  3. Pour in Stock: Pour 1 cup of beef or chicken stock over the meat and vegetables.
  4. Cook Low and Slow: Cover the crockpot with its lid and cook on low for 8-10 hours or on high for 4-6 hours until the meat is tender and easily slices.
  5. Serve: Slice the corned beef against the grain and serve with the cooked vegetables.
