Ingredients
- 1 lb (450 g) Italian sausage, ground
- 4 medium potatoes, peeled and diced
- 3 cups fresh kale, chopped
- 1 small onion, finely chopped
- 3 cloves garlic, minced
- 4 cups (1 liter) chicken broth
- 1 cup (240 ml) heavy cream
- 1 tablespoon olive oil
- ½ teaspoon black pepper
- ½ teaspoon salt, or to taste
- ½ teaspoon Italian seasoning
- ¼ teaspoon red pepper flakes (optional)
- Grated Parmesan cheese, optional
Instructions
- Cook the sausage: Heat olive oil in a large pot over medium heat. Add the sausage and cook until browned, breaking it into small pieces.
- Add aromatics: Stir in the chopped onion and garlic. Cook for 2–3 minutes until fragrant.
- Add potatoes and broth: Add the diced potatoes, chicken broth, black pepper, Italian seasoning, and salt. Bring to a boil.
- Simmer: Reduce the heat and cook for 15–20 minutes, until the potatoes are fork-tender.
- Add kale: Stir in the chopped kale and cook for another 3–5 minutes until softened.
- Make it creamy: Lower the heat and stir in the heavy cream. Simmer gently for 2–3 minutes without boiling.
- Serve: Taste and adjust the seasoning. Serve hot with grated Parmesan and crusty bread, if desired.
